3-Minute Blender Salsa

I love the taste of restaurant salsa and just don’t love most jarred salsas. But, I rarely want to take the time to do all the chopping to make salsa. Enter – 3-minute blender salsa. Literally timed myself and even with a few interruptions – THREE minutes to make this salsa that tastes like a restaurant. Now, that is a salsa I can get on board with and my family loves it! The tomatoes come from a can, but you would never guess it! You chose how spicy you want to make it. Our salsa go-to and pairs great with any Mexican dish!

Ingredients
  

  • 1/2 bunch cilantro about 1 cup packed
  • 1 medium onion skin removed and quartered
  • 1 14oz can diced tomatoes
  • 1 10oz can diced tomatoes with green chilis
  • 1 teaspoon garlic powder
  • 1/2-1 seeded jalapeno optional, depends on how spicy you like it!
  • 3/4 teaspoon salt
  • 1/2 teaspoon cumin

Instructions
 

  • In a food processor, pulse the cilantro and onion finely chopped.
  • Add remaining ingredients and pulse to combine - careful, it doesn't take much to combine this, I only need 6-7 pulses in my blender. Pulse until finely chopped to desired consistency. Stores in the fridge for up to a week.

    This came together so quickly and using canned tomatoes ensured a rich tomato-y taste. The texture is perfect. My husband fell in love with a store bought salsa but it has sugar so I had to try Autumn’s recipe. He loved this too!

    This is a family favorite. My husband is always so happy when I make this fresh homemade salsa, never failing to mention how much better it is than store bought.

      My husband loves a store bought restaurant style salsa, but it has sugar in it. I decided to try this recipe for him and he loves this now! The canned tomatoes ensure a rich tomato flavor no matter what time of year it is. I love that it is easily tweakable for hotness, cilantro, and onion preferences. It is addicting!
