Bacon Wrapped Ranch Chicken
Recipe from Whole Food for Your Family, page 93
Ingredients
- 1 pound boneless skinless chicken breast
- 8 slices bacon
- 1 package toothpicks
Ranch Seasoning
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon dried dill
- 1/2 teaspoon Italian seasoning
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Combine all of ranch seasoning ingredients in a small bowl. Set aside.
- OVEN: Turn the oven to broil (high if you have an oven with the choice of high or low). Line a rimmed baking sheet with parchment paper. If you have one, set a cooling rack on your baking sheet, which will allow the bacon grease to drain and keep the bacon crispy. If not, cook the chicken directly on the parchment paper.
- Sprinkle the chicken with ranch seasoning and rub it all over. Wrap each piece of chicken with half a piece of bacon. Secure bacon with a toothpick (but be sure to remove them before eating!). Try to avoid overlapping the bacon too much, as the overlapped bacon won't cook as well.
- OVEN: Lay the wrapped chicken on the cooling rack (if using) or parchment-lined baking sheet. Broil the chicken for 10 minutes, then flip. If not using a cooling rack, carefully drain off the grease before you flip. Broil for another 10 minutes. AIR FRYER: Place the chicken in a single layer in the air fryer. You may need to cook in multiple batches for this. Air fry at 400 degrees for 7 minutes, flip, and then cook for 7 minutes more.Chicken is done when the bacon is crispy and the chicken is cooked through with no pink in the center.
