Date Chipotle Sauce

Instructions

For the Carrot Fries

  • If baking in the oven, preheat the oven to 400 degrees. Line a baking sheet with parchment paper and set aside.
  • Trim off the tops and tips of the carrots. Cut them into thin "fry" shapes. I leave the skins on. Steam for 5 minutes until tender. I do this in a stasher bag with 2 tablespoons water or a glass dish with 2 tablespoons of water covered with microwave-safe plastic wrap in the microwave. Drain any excess water from the carrots and pat dry.
  • In a large bowl, toss the carrots in the olive oil. Sprinkle with the flour, garlic powder, onion powder, paprika, and salt and toss to coat.
  • OVEN: Spread the carrots over the prepared baking sheet and bake for 20 minutes. Increase the heat to 425 degrees and bake 15 minutes more, until the fries are crispy.
AIR FRYER: Place the carrots in an air fryer basket and cook at 350°F for 15 minutes. Increase the heat to 400 °F and cook 5-7 minutes more, until the fries are crispy. If the carrots are not in a single layer in your basket, gently toss them halfway through.

For the Date Chipotle Sauce

  • MAKE DATE PASTE (for Whole30, if using): Combine dates and 1/2 c hot water in a blender or food processor and let sit for 1 minute. I usually press them down into the water a bit to ensure they are all soaking. Blend/process for 30 seconds, or until smooth. This makes your Date Paste.
Store any remaining date paste in a sealed container in the fridge for up to 2 weeks.
  • In a medium bowl, combine the mayo and all the spices. Add 2 tablespoons date paste. Add more date paste, as desired, for added sweetness. Serve with the carrot fries.

Notes

NOTE: If you are not on a Whole30, you can use 2 tablespoons maple syrup instead of the date paste to sweeten the sauce.
*Add additional chipotle chili powder to desired heat level.
