Instructions

  • Preheat the oven to 375 degrees. Line a baking sheet with parchment paper.
  • Wrap the steamed cauliflower in a clean towel and squeeze out all the extra water. (I do this over the sink). Just when you think you have it all out, squeeze some more! I'm usually able to squeeze out more than 1/2 cup of water, with a little bit over a cup of the cauliflower left.
  • In a medium bowl, stir together the drained cauliflower with the egg, starch, oil, garlic salt, and onion powder. Spoon teaspoon-sized dollops onto the prepared baking sheet. I make this easier with a 1-teaspoon baking scoop. Generously spray the tots with cooking oil spray.
  • Bake for 15 minutes, then flip. Generously spray the second side of the tots with cooking oil spray and increase the oven temperature to 400 degrees. Bake for 15 minutes more, until the tots are crispy on both sides. Salt to taste and serve.
  • FREEZE: Freeze the tots in a single layer until frozen, then store in a sealed container or reusable bag in the freezer for up to 3 months.

Notes

NOTE: I use steam-in-a-bag cauliflower to make this easy. Once the cauliflower is steamed, be sure to squeeze out ALL the excess water to get a nice, crispy texture. Potato starch will get the crispiest tot results, but you can also substitute tapioca or arrowroot starch.

I’m not a huge fan of cauliflower, so I was all set to not like them. But they were really good!! My husband thought they were great, too!

    • That’s the best kind of surprise! 😄 I love when cauliflower wins over even the skeptics. So glad you and your husband both enjoyed them — thanks so much for sharing! 💛

  2. When freezing these, do you freeze before or after baking them?

    Reply
    • I freeze them after cooking. You can undercook them a bit (about half the cooking time) if you know you are going to freeze them, so they can finish cooking from the freezer.
