Chicken-Fried Steak Bites
Ingredients
Steak Bites
- 1 1/2 pounds cube steak
- 1 cup instant mashed potato flakes
- 1/2 cup tapioca flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 2 large eggs see notes
- 1/2 cup canned full-fat unsweetened coconut milk
- 1/2 cup coconut oil or avocado oil, if cooking on stove
White Gravy
- 1 cup canned full-fat unsweetened coconut milk
- 3 tablespoon cassava flour
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon onion powder
Instructions
Steak Bites
- Sandwich the cube steaks in between two layers of paper towels. Lay a baking sheet, small pan, or large plate on top of them to help blot excess moisture. This will help the batter stick.
- In a food processor, combine the potato flakes, tapioca flour, salt, pepper, paprika, garlic powder, and onion powder. Pulse for 1-2 minutes, until the potato flakes have been ground more finely and the mixture is well blended. Transfer the mixture to a large reusable zip-top bag or bowl.
- In a medium bowl, whisk together the eggs and the coconut milk.
- Cut the steak into roughly 1-inch pieces. Toss the steak pieces in the dry ingredients to coat. Individually add the steak pieces to the egg-milk mixture, shaking off excess dry breading before adding, and toss until all the pieces are coated. Transfer the steak to a colander and let any excess coating drip off. Toss the steak in the dry ingredients once more until well breaded.
- STOVE: Line a baking sheet with paper towels and set a metal cooling rack on top, if you have one. Using a cooling rack will help them maintain their crispness. Set aside. In a large saucepan, heat the oil over medium heat. One the oil is hot, add the steak in a single layer without crowding the pan. You will probably need to do this in two batches. Cook for about 4 minutes on each side, until the steak is golden and crispy. Transfer the cooked steak to the prepared baking sheet. Repeat with any remaining steak pieces.
- AIR FRYER: Lay the breaded steak in a single layer in the basket. You may need to do this in multiple batches. Spray the steak pieces generously with cooking spray on all sides. Cook for 13-15 minutes, until crispy.
White Gravy
- While the steak is cooking, make the gravy. In a medium pot over medium heat, stir together the coconut milk, flour, salt, pepper, and onion powder.
- Cook for 1-2 minutes, stirring regularly, until the sauce thickens into a gravy. Watch closely, as this happens quickly, and you don't want the gravy to get too thick. Remove the pot from the heat and serve the gravy with the steak bites.
- FREEZE: Freeze the steak bites in a single layer on a cooling rack or baking sheet. Once frozen, store in a sealed container in the freezer for up to 3 months. Freeze the gravy in a sealed container separately from the steak bites.
Notes
EGG-FREE: To make this egg-free, use 1 cup coconut milk total instead of the egg + coconut milk combination for the steak breading.
