Eating healthy can be incredibly delicious and this dish is a slam dunk on taste. Excellent on the grill, but can also be cooked on the stove or in the oven. Simple ingredients, takes less than 20 minutes prep and the perfect fresh summer meal!  Delicious with my Cilantro Lime Cauliflower Rice

Cilantro Lime Chicken with Avocado Salsa

Ingredients
  

Cilantro Lime Chicken with Avocado Salsa

  • 2 pounds chicken breast, trimmed
  • 1/4 cup olive or avocado oil
  • 1 cup cilantro leaves, finely chopped *about half a bunch
  • 1/4 cup lime juice + zest of one lime
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1 teaspoon pepper

Avocado Salsa

  • 3 large avocados (or 4 medium) - peeled, pitted and diced
  • 2 large roma tomatoes
  • 1/2 bunch cilantro, finely chopped
  • 1/4 cup finely diced onion
  • juice of one lime or 1 tablespoon lime juice
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • pinch cumin

Instructions
 

  • Combine all the chicken marinade ingredients. For more flavorful chicken, stab each breast all over with a fork before adding to the marinade. Excellent for getting some aggression out, ha!
  • Marinate chicken for at least 30 minutes, up to overnight.
  • Cook marinated chicken on a grill heated to 450 degrees for 5-6 minutes on each side, discarding marinade and flipping only once, cooking to an internal temperature of 165. For the stove, discard marinade and cook in a greased skilled at a medium high heat for 6-7 minutes on each side until cooked through with no pink inside. The stove and grill are my favorite methods, for the crispy bits it creates, but can also airfry at 350 for 15 minutes or until cooked through.
  • Combine all avocado salsa ingredients in a medium bowl while chicken is cooking and keep chilled in fridge until ready to use.
  • Top cooked chicken with salsa and enjoy!

  2. This recipe is amazing. So much flavor, easy and delicious. Will pass on buying pre-marinated cilantro lime chicken from now on. I did mine in the crockpot with a can of diced tomatoes. Grocery store was out of good avocados so I can’t wait to try it with the avocado salsa next time.

    Oh my goodness. This was mind blowing good. I didn’t even get to marinate the chicken long and it was still so good. Had with some coconut cauliflower rice and holy cow it might be my new favourite meal!!

    This meal is delicious, and wonderful as leftovers! We let the chicken marinate for 4 hours and grilled it, it was so moist and flavorful. My favorite part is the avocado salsa! My kids loved it as well, which makes dinner time easier and peaceful!

        I made this recipe last night for the first time and will be adding it to our regular rotation! I loved Autumn’s suggestion to poke holes in the chicken before putting it in the marinade. Definitely marinate it for as long as you can–I was able to do about 2 hours but am going to plan ahead better for next time to make this already super flavorful chicken breast even tastier😁
