Confetti Nuggets
Recipe from Whole Food for Your Family, page 86
Ingredients
- 1 pound ground chicken or ground turkey
- 1 cup frozen stir-fry veggies steamed, finely chopped, then measured; can also use frozen normandy veggies
- 3 tablespoon arrowroot or potato starch
- 1 teaspoon garlic salt
- 1 teaspoon onion powder
- 1 teaspoon paprika
Instructions
- Preheat the oven to 400 degrees, if using. Line a baking sheet with parchment paper.
- In a medium bowl, mix together all ingredients. I find this easies to do with my hands. Once combined, shape about 1 tablespoon of the mixture into a ball and place it on the prepared baking sheet. Gently flatten the ball with your hand so it takes on more of a nugget shape. Repeat with the remaining mixture.
- OVEN: Bake for 10 minutes, flip, and then broil on high for another 7-8 minutes, until browned. AIR FRYER: Generously spray the air fryer basket with cooking oil. After shaping the nuggets, place them in a single layer in the basket. Cook at 350 degrees for 8-10 minutes, until browned.
- Serve these with your favorite dipping sauce!
- FREEZE: After cooking the nuggets, freeze them in a single layer. Stor in a sealed container or zip-top bag for up to 3 months.
Notes
My favorite dipping sauces are my Whole30 "Honey" Mustard, Raising Cane's Copycat Sauce, and Copycat Chick-fil-A Sauce.Â
