Ingredients You’ll Need

For this recipe, you’ll need just a few simple ingredients:

  • Gluten-free corn or Paleo flour tortillas: Choose your favorite type based on dietary needs. For Paleo, opt for grain-free tortillas such as Siete Almond or Cassava Flour Tortillas. For a budget-friendly Paleo cassava flour tortilla option, see page 244 of my Cookbook.
  • Ground beef: We prefer the classic flavor of ground beef, but you can also substitute it with ground turkey or chicken. Or, see recipe notes for other taco meat you can use in this cooking method. 
  • Taco seasoning: I always save money by making my Homemade Taco Seasoning. 5-ingredients and only 5 minutes to make! Or, for a store-bought option, we love Siete Taco Seasoning, which is Whole30 Approved. Make sure to check the label for gluten-free and dairy-free ingredients.

  • Cooking oil spray: Use cooking oil spray to help the tortillas get nice and crispy.
  • Salt: A pinch of salt enhances the flavor of the taco shells.

Step-by-Step: How to Make Crispy Air Fryer Tacos

1. Prepare the Ground Beef

Cook the ground beef, sprinkled with the taco seasoning, in a skillet over medium heat. Mix well to ensure every bite is flavorful. Cook until the beef is fully browned and no longer pink. Set aside.

2. Preheat the Air Fryer or Oven

While the beef is cooking, preheat your air fryer to 350°F or oven to 425°F. Preheating is key for getting that perfect crisp on your tortillas.

3. Soften the Tortillas

Next, to be able to make the tacos, you will need to soften the tortillas. I do this by wrapping them completely with a wet paper towel and microwaving for 1-2 minutes, until tortillas are pliable and won’t break when folded over. Or, if using the oven, you can warm them up in the oven on a sheet pan for 3-4 minutes to soften.

4. Assemble the Tacos

Lay out your tortillas on a piece of parchment or foil on a counter for easy clean-up. Spray a softened tortilla with cooking oil. Flip over and spoon about 1 tablespoon of cheese on half the tortilla. Add about 3 tablespoons meat on top, then fold the other half of the tortilla over to cover. Repeat with all the tortillas and fillings.

5. Air Fry or Oven Bake the Tacos

AIR FRYER: Lay the tacos on your air fryer basket in a single layer. Make sure they don’t overlap. Spray generously with cooking oil. Sprinkle with a pinch of salt. Depending on the size of your air fryer, you may need to cook in batches. Cook for 4 minutes, flip and spray again generously with cooking oil, then cook another 4-5 minutes, until tacos are crispy and lightly browned (about 8-9 minutes total).

OVEN: Lay the tacos on a large baking sheet lined with parchment. Make sure they don’t overlap. Sprinkle with a pinch of salt. Bake for 10 minutes. Flip and spray again generously with cooking oil. Bake another 10 minutes or until tacos are crispy and lightly browned.

6. Season and Serve

Once your tacos are crispy, remove them from the air fryer or oven. Serve immediately while they’re still hot and crunchy. Pair with your favorite toppings like salsa, guacamole, shredded lettuce, or Cilantro Ranch.

Tips for Perfect Air Fryer Tacos

  • Don’t Overfill: Overfilling the tortillas can cause them to split or not crisp up properly. A little filling goes a long way!
  • Use a Toothpick: If your tortillas are not staying folded, secure them with a toothpick before placing them in the air fryer.

Notes

CHICKEN VARIATION: Instead of the beef, add 2 tablespoon oil to a large skillet over medium heat. Once hot, add 1 pound finely chopped chicken and the taco seasoning. Follow the recipe as written from there.

  1. Tastes delicious but my air fryer kept blowing the tortillas open so they were a mess to make and figure out. Any tips?

    • Good question! That didn’t happen to me but I can see how it would. I would just stick a toothpick through the top of the taco to keep it in place while it gets crispy. Hope that helps and glad they were still tasty.
