- Tapioca flour, potato starch, or 1:1 gluten-free flour – Helps create that crispy outer layer and prevent french toast sogginess!
- Nutpods or your favorite dairy-free milk – We love using Nutpods, as it adds extra flavor depth. So yummy! Or you can use your favorite dairy-free milk – almond milk, coconut, oat, or almond-free options all work here.

How to Make It

- Blend or Whisk – In a blender or a shallow bowl, blend or whisk together eggs, dairy-free milk, flour, collagen (if using), coconut sugar, vanilla, cinnamon, and salt until smooth. This will only take a few seconds in a blender. I prefer the blender, as it helps
- Crush – Place gluten-free rice crispies in a zip-top bag and lightly crush them. Spread onto a plate or shallow dish.
- Dip & Coat – Dip each slice of gluten-free bread into the egg mixture. Then press both sides of the bread into the crushed gluten-free rice crispies, coating well. Be sure to press the bread slightly down into the rice crispies, to help them stick into the batter.
- Cook – Heat a nonstick skillet over medium heat with a little dairy-free oil or spray. Cook each slice 2–3 minutes per side, until golden brown and crispy.
- Serve – Serve warm with maple syrup, berries, or powdered coconut sugar.
