Flourless Chunky Monkey Muffins - gluten-free, dairy-free, paleo, with nut-free option

These Flourless Chunky Monkey Muffins were a quick family hit. When I made these flourless muffins for the first time, my kids said it was like our favorite smoothie (chunky monkey) in a muffin. Hence – chunky monkey muffins!

Why we love these Flourless Chunky Monkey Muffins

They are gluten-free, dairy-free, and grain-free. Want them to be paleo or can’t do peanut butter? You can use cashew butter or sun butter instead. I love that they use 8 basic ingredients and only take 10 minutes to prep.

Plus they freeze great! I almost always double batch my muffins. I freeze them in individual container such as these ones from Target. My boys pack them straight from the freezer to their lunchboxes and they are thawed (and not smooshed) by lunchtime! Perfect for lunches, snacks, or an easy breakfast side.

They quickly come together in a food processor. Don’t have a food processor? You can mix them with a hand mixer instead, just make sure to mash up the banana well beforehand.

Ingredients

  • Nut butter of choice – We love making these with peanut butter. I love using one that has no added sugar like Trader Joes or the new no sugar added Skippy peanut butter (pictured) that is nice and thick. Can’t do peanut butter? You can use cashew butter for a Paleo option or sunbutter for nut-free.
  • 2 ripe bananas
  • Apple cider vinegar
  • Baking soda – Baking soda will make baked goods taste tinny unless there is an acid like vinegar to activate it. The vinegar and baking soda in this recipe act together to leven the muffins. Make sure to use both!
  • Eggs – I don’t have an egg substitute for this recipe that I have tried successfully. But, if you need egg substitutes, I recommend checking out this blog post with 8 suggestions and how to use them.
  • Vanilla – Pure vanilla is ideal but not always affordable. Vanilla extract works here too!
  • Pinch of salt
  • Chocolate chips – For a great gluten-free + dairy-free chocolate chip option, I love Enjoy Life Chocolate Chips. If you need a paleo option, I prefer Hu gems chopped up or Hu chocolate chips.

Flourless Chunky Monkey Muffins

Ingredients
  

  • 1 c nut butter of choice
  • 2 bananas
  • 1 teaspoon apple cider vinegar
  • 1/2 teaspoon baking soda
  • 2 tablespoons honey
  • 2 eggs
  • 1 teaspoon vanilla
  • pinch of salt
  • 1/2 c chocolate chips*

Instructions
 

  • Preheat oven to 350.
  • Prepare muffin tins with muffin wrappers or grease with cooking spray.
  • Combine all ingredients except chocolate chips in a blender or food processor.
  • Stir in chocolate chips and pour 1/4 c into each muffin cup.
  • Bake for 18-22 minutes, until set.

    I’ve never had a “flour-less” muffin taste so delicious (especially if you are a banana/peanut butter lovers)! Everyone in my home loves these and the pan is basically gone in one day! Not to mention ingredients most people have on hand, they can be whipped up in an instant without too much planning, win win!

    I really wasn’t sure about these having no flour like substance. BUT…Everyone in my family gobbled them up tonight and with 3 kids under 9 and a husband who doesn’t like bananas or “heathy” muffins that is an accomplishment! Now I just should have doubled so I could freeze some!

  7. These are so good and they freeze and reheat wonderfully!! Made a batch for my kiddos(2&4) a few weeks ago while I was doing a whole 30 and froze 2 to try once I finished. Thawed one on the counter and popped in the microwave and it was perfect. The texture of these is by far the best of any paleo baked good I’ve ever made.

    I don’t like bananas, nor do I like peanut butter, but I love these muffins! Great way to have a treat, but also get lots of healthy fats and nutrients in :). Very soft and moist. My favorite way to make them is with half almond butter and half peanut butter. They freeze really well too! Yet another recipe from Autumn that is a winner!

    These muffins were a huge hit with my kids. We made them with peanut butter for a delicious PB+chocolate combo. I would love to see the recipe modified to use a whole (standard sized) jar of peanut butter. I felt like the recipe used up most of a single jar, and I would have just preferred to dump the whole jar of natural PB in the blender and use it all up in one recipe.

        This is a win for my kids. Not only can they make them on their own in the blender, but they actually want to eat them. I agree with other comments – just double the batch. Freeze them up! Your future self will thank you!

        Side note- my daughter hates eating anything banana or peanut butter flavored, but she eats these! Go figure?!

            Delicious!!! You can’t even tell they don’t have flour. I also did the PB/Almond butter mix and these babies are hitting the spot.

        • These are so good! I’ve made them with peanut butter and with almond butter and they’ve been delicious every time! My kids (ages 7&8) love them too!! Super easy to make and yummy, that’s a win for me!
