Dairy-free Parmesan cheese – gives that savory, melty finish without the dairy. There are several brands of dairy-free parmesan cheese out there. Our hands down favorite one to use for this recipe was this one by Follow Your Heart. Even though I never loved parmesan cheese in a can, that dairy-free parmesan cheese produced the all-around favorite flavor!

Fresh Italian parsley – Fresh herbs go a long way with a pop of flavor, so be sure to use fresh parsley for this recipe.
- Minced fresh garlic – I prefer to get pre-minced garlic such as this one from Walmart to save time. But you can always mince your own garlic if you prefer and have time from whole garlic bulbs.
- Garlic powder or granulated garlic

Toss chicken with ranch dressing, 1/4 cup parmesan, minced garlic, garlic powder, salt, and pepper. Let it marinate for at least 30 minutes, up to overnight.

Garlic Ranch Parmesan Chicken Kabobs
Equipment
- 6 skewers metal or wood skewers soaked in water for 30 minutes
Ingredients
- 1.5 pounds boneless skinless chicken breast
- 4 ounces ranch dressing (1/2 cup) I prefer homemade, see notes
- 1/2 cup dairy-free parmesan divided, see notes
- 1/4 bunch fresh parsley chopped, then measured to about 1/4 cup finely chopped
- 2 tablespoons fresh minced garlic
- 1 tablespoon garlic powder
- 1 teaspoons salt
- 1/2 teaspoon black pepper
Instructions
- Trim and chop your boneless skinless chicken breast into bite-sized chunks.
- Toss chicken with ranch dressing, 1/4 cup parmesan, minced garlic, garlic powder, salt, and pepper. Let it marinate for at least 30 minutes, up to overnight.
- Thread the seasoned chicken onto skewers.
- GRILL - Heat the grill to medium heat, around 350 degrees. Brush grates with olive oil (if you don't, the chicken will stick!). Place kabobs on the grill and grill for 5 minutes. Flip, and cook 4-5 minutes more or until chicken is browned. Chicken should be cooked through, to an internal temp of 165.
- OVEN - Preheat oven to Broil. Place skewers on a baking sheet lined with parchment. If you have a cooling rack, put that inside the sheet pan and cook them on top of that. Broil for 5 minutes, flip, and then broil for an additional 5 minutes or until golden brown and cooked through. If they aren't browning, move rack closer to the broiler Watch these closely so they don't burn - every oven broil is different and how close the pan is to the broil will vary the cooking rate greatly.
- AIR FRYER - Cook at 425°F for 12 minutes, flipping halfway through.
- Once cooked, sprinkle with additional parmesan cheese and salt to taste.
