- Almond flour – Almond flour + tapioca flour are the perfect duo for a light but moist texture. See recipe notes for nut-free option. I prefer “super-fine” almond flour to get the best texture. I like this one from Blue Diamond I can get at Sam’s Club or Amazon.
- Tapioca flour – Adds a bit of elasticity and helps bind the muffins together, giving them that perfect muffin texture without any gluten. Though you can use arrowroot or potato starch instead, tapioca is ideal for its ability to give a stretch to baked Paleo goods that can be dry. - Unflavored collagen powder – The secret ingredient that boosts the protein content, making these muffins not just tasty but also a great source of protein. Yes, you can use another unflavored or vanilla protein powder of your choice in these as well. There are a lot of collagen brands out there. Use what is most accessible to you. I often get Vital Proteins unflavored collagen when it is on sale at Costco. I love and use BUBS Collagen, which is Whole30 Approved.

You can use regular dairy-free yogurt instead, if you can’t find the Greek yogurt, greek yogurt just has more protein in it. For a Paleo option, use a Paleo yogurt like Cocojune or Culina.

- Coconut sugar – Used in the topping to give it a cinnamon roll sweetness. If you aren’t Paleo, you can also use brown sugar.
- Vegan butter – Use a vegan butter like this one I love from Walmart

Gluten-free Cinnamon Roll Protein Muffins
Equipment
- 1 muffin pan
Ingredients
- 3 cups almond flour see notes for nut-free
- 1/2 cup tapioca flour see notes for nut-free
- 1/2 cup unflavored collagen powder or other unflavored or vanilla protein powder of choice
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup dairy-free Greek yogurt or any vanilla yogurt that works for you
- 1/2 cup maple syrup
- 1/4 cup light tasting olive oil
- 3 large eggs
- 2 teaspoons vanilla
Cinnamon Strudel
- 1/2 cup + 1 tablespoon tapioca flour or gluten-free 1:1 flour
- 1/3 cup coconut sugar paleo, can use brown sugar if preferred
- 4 tablespoon vegan butter measured then melted, can use regular butter if don't need dairy-free
- 1 tablespoon cinnamon
Instructions
- Preheat oven to 375°F and line a muffin tin with paper liners or grease it lightly with oil.
- In a large mixing bowl, whisk together the almond flour, tapioca flour, collagen or protein powder, baking powder, and salt.
- Add the wet ingredients (yogurt-eggs) into the bowl with the dry ingredients. Stir gently until combined.
- In a separate small bowl, make the strudel by combining the flour, sugar, and cinnamon. Then, add in with a fork the melted butter. Mix until large crumbs form. Don't overmix. If it turns into a paste, not crumbs, at 1 additional tablespoon flour at a time until it goes into crumbs.
- Add 1.5 tablespoons of batter to every muffin cup, just covering the bottom of the muffin cup. Then, add 1 heaping teaspoon of strudel to each. Add another 1.5 tablespoons of batter to each muffin cup, then top with another 1 heaping teaspoon of strudel. Press streudel gently into the top of each muffin. Muffin cups will be very full. Bake at 375 degrees for 10 minutes. Then, without opening the oven, reduce the oven heat to 350 degrees. Cook for an additional 10-12 minutes, or until top is solid to the touch and some are starting to lightly brown.
- Let the muffins cool in the pan for 5 minutes before transferring them to a wire rack to cool completely. Top with option glaze, if using.
- TO STORE: Store on the counter in a sealed container or ziptop bag with a paper towel underneath them to help absorb any excess moisture. Or, freeze in a sealed container for up to 3 months.

- 3 tablespoons of heavy vegan cream or canned unsweetened full-fat coconut milk (can use other non-dairy milk, it will just be thinner)
- 1 cup powdered sugar or powdered monk fruit sugar
- 1/2 teaspoon vanilla or lemon extract for an easy glaze drizzle.
- 2 cups 1:1 gluten-free flour instead of the almond + tapioca flour. Yes, only 2 cups 1:1 gluten-free flour total (don't use the tapioca flour). I tested it with and highly recommend King Arthur 1:1 Gluten-free Flour for best results.
- Increase the yogurt to 1 cup yogurt
- Add 1/4 cup coconut sugar or other granulated sugar of choice.
- NOTE: These changes will have a large impact on the nutritional content of your muffins.
