You only need a handful of real food staples to pull this off:

  • Ground breakfast sausage – There are a lot of options here. I usually get this brand at Walmart, as it’s easily accessible and we like the taste of it. But, get whatever fits your dietary needs and budget. 

  • Eggs – The base of your “sauce” layer.

  • Dairy-free milk – Helps create a soft, fluffy egg texture.

  • Salt + pepper – For simple seasoning.

  • Dairy-free cheese – Melts beautifully and gives you that classic pizza vibe. My favorite brand is Violife or Follow Your Heart, as they melt the best and taste the most “normal.” But, sadly no dairy-free cheese truly melts like dairy cheese.   • Gluten-free English muffins – The perfect crispy base. My hands down favorite ones come from Trader Joe’s – budget-friendly and soft texture! But, there are also these ones or these ones you can find at Walmart. Or, build these on a gluten-free bagel instead!

How to Make It

  1. Cook the sausage – Start by browning your ground breakfast sausage in a skillet until fully cooked. Drain excess grease if needed.

  2. Preheat the oven to broil & toast – Preheat the oven to broil. Lay the English muffins open-faced on a parchment-lined baking sheet. Toast your gluten-free English muffins until slightly golden. Keep an eye on them so they don’t burn! You’ll use one half of the English muffin for each mini pizza. 
  3. Whisk the eggs – In a bowl, whisk together eggs, dairy-free milk, salt, and pepper. Pour into the same pan with the sausage. Scramble until just set—don’t overcook, they’ll bake again!

  4. Assemble – Spoon scrambled eggs and sausage over each muffin half. Top with a generous sprinkle of dairy-free cheese.

  5. Bake – Pop into the oven just until the cheese is melted and bubbly, about 5-6 minutes. Watch closely! 

  6. Serve – Enjoy hot, or let cool and freeze for later.

  • Cook the sausage – Start by browning your ground breakfast sausage in a skillet over medium heat until fully cooked. Drain excess grease if needed.
  • Preheat the oven to broil & toast - Preheat the oven to broil. Lay the English muffins open-faced on a parchment-lined baking sheet. Toast your gluten-free English muffins until slightly golden. Keep an eye on them so they don't burn! In my oven, this took 2 1/2 minutes. You'll use one-half of the English muffin for each mini pizza. 
  • Whisk the eggs – In a bowl, whisk together eggs, dairy-free ranch, salt, and pepper. Pour into the same pan with the sausage. Scramble until just set—don’t overcook, they’ll bake again! Spread them out flat in the pan and let them cook for one more minute to help them stick together and transfer onto the English muffins more easily.
  • Assemble – Spoon scrambled eggs and sausage over each half of the muffin. Top with a generous sprinkle of dairy-free cheese and bacon crumbles.
    HACK: To achieve the perfect size for eggs to put on top of the English muffin, I used the top of a kitchen cup to cut circles out of the egg mixture, which then fit perfectly on top of the English muffin.
    You can also put cheese between the egg and the English muffin, to help them stick together. Or, my kids just prefer to put a sauce like ranch or ketchup there afterwards.
  • Bake – Pop into the oven just until the cheese soft and pizza is lightly browned, about 5 minutes. Watch closely! 
  • Serve – Enjoy hot, or let cool and freeze for later.
