- Beef broth – Cooks the pasta and forms the sauce. You can use bone broth for additional nutrients and protein.
- Chickpea pasta – Gluten-free with extra protein. Yes, you can use a regular gluten-free pasta; you will just need to watch the cooking times (it will probably be shorter) and may not need as much broth.
- Tomato paste – Adds depth without making it taste like spaghetti
- Yellow mustard – Key for that cheeseburger flavor
- Coconut aminos – Adds a slightly sweet, savory balance. You can also use Worcestershire sauce, just double-check it’s gluten-free.
- Paprika, garlic powder, onion powder – Simple seasoning

- Unsweetened vegan cream – Helps keep the sauce smooth. Vegan heavy cream has become wonderfully easy to find! Use vegan heavy cream like this one from Target or Walmart. You can also use canned full-fat unsweetened coconut cream, if needed.

How to Make It
- Cook the beef, onion, and garlic
In a large skillet, cook ground beef over medium heat with chopped onion until browned. Drain excess grease if needed. Stir in garlic and cook 30 seconds. - Build the flavor

- 1/2 teaspoon apple cider vinegar optional, if you have it

I did make some adjustments (Goodles + whole milk) to work with what I had on hand. Here are my notes in case this is helpful for someone else! I followed the recipe for the ground beef; onion; garlic; seasonings; mustard; tomato paste; and beef broth. Instead of chickpea pasta, I dumped in two 6oz boxes of Goodles (Cheddar Mac flavor). After letting the pasta cook (followed timing given on box), I dumped in the pouches of cheese powder and added some milk until it looked right to me. Also mixed in ~1 to 3 tsp Nutritional Yeast for a bonus, haha.
