How far ahead can I make these? Most of these are better made ahead. The pasta salads, broccoli salad, slaw, and dips can all be made the night before — the flavors actually come together as they sit. Fruit salad is best made the same day so the fruit stays fresh, but even that holds a few hours.

How do I keep cold sides safe to eat at an outdoor party? Keep anything mayo- or dressing-based in a cooler with ice packs until it’s time to eat, and try not to let it sit out in direct sun for more than a couple of hours. A cooler bag with a cold pack underneath the bowl on the table buys you extra time.

Which of these travel the best? The slaw, broccoli salad, kale salad, and both pasta salads are the sturdiest — they’re built to be made ahead and hauled around. The dips travel great in a sealed jar or container. I’d save the fruit salad assembly for closer to go-time.
