Ingredients
- Ground beef – I usually use 85/15 leanness, but you can use whatever is accessible to you. If using a ground beef or pork with a higher fat content, drain excess fat before adding in the sauce. Also, you can use whatever ground meat works best for your family. This dish works well with ground pork, turkey, or chicken as well.
- Onion – A yellow, white, or sweet onion all work equally well in this dish.
- Minced garlic – I prefer to buy pre-minced garlic like this one from Walmart. But, you can always mince your own whole garlic cloves instead.
- Cremini or button mushrooms (optional) – For a classic Stroganoff touch. These are optional! My family does not like mushrooms, so we leave them out. If using mushrooms, add an additional 1/2 cup beef broth to the sauce.
- Potato or arrowroot starch – These are the grain-free, Paleo, and Whole30 swaps for cornstarch to thicken a sauce. Just make sure to whisk them into the liquids before adding to heat, per the instructions. If you try to whisk these starches into a hot liquid, they will clump! - Beef broth – Builds a savory, rich sauce. You can use beef bone broth for added protein if desired.
- Coconut aminos – Adds umami without soy or gluten. Coconut aminos are a great replacement for soy sauce and add a great depth of flavor. We can find coconut aminos at Walmart or Trader Joe’s.
- Dijon mustard – Brings the tang
- Dairy-free sour cream – Keeps it creamy without the dairy. Dairy-free sour cream is becoming more and more common and is a wonderful dairy-free option. I like the Violife brand, I’ve also found a store brand available at Smiths in Utah.

How to Make It
- Brown the beef – Start by cooking the ground beef in a large skillet until no longer pink, about 10 minutes. Add the onions halfway through (and mushrooms if using), cooking until soft. Add garlic the last minute of cooking and cook until fragrant.
- Make the sauce – Whisk together the broth, starch, coconut aminos, and dijon mustard. Add to the pan of ground and bring to a simmer, cooking until thickened, about 10 minutes.
- Finish it creamy – Stir in the dairy-free sour cream. Simmer until warmed through and creamy.
- Serve hot – Over your favorite gluten-free or Paleo base and enjoy!

- 1.5 cup beef broth
- 2 tablespoons coconut aminos
- 2 tablespoons arrowroot or potato starch
- 1 tablespoon dijon mustard
- 1/2 cup dairy-free sour cream
- 8 ounces gluten-free pasta we prefer Banza; or other gluten-free pasta of choice, see notes
Instructions
- Brown the beef – Start by cooking the ground beef in a large skillet until no longer pink, about 10 minutes. Add the onions halfway through (and mushrooms if using), cooking until soft. Add garlic the last minute of cooking and cook until fragrant.
- Make the pasta - While the meat is cooking, boil water and cook pasta according to package instructions (see notes).
