My boys were thrilled when I made these gluten-free Disneyland peanut-butter sandwiches. With only 6-ingredients, 20 minutes hands-on prep time, no-bake, and also dairy-free, egg-free + refined sugar-free, these handheld chocolate peanut butter sandwiches are sure to be a family favorite!
Disneyland Copycat
A few years ago my sister, an avid Disneyland fan, sent me a photo of a chocolate peanut butter graham cracker sandwich from Disneyland. She told me I needed to add it to the list of things I needed to create a copycat gluten-free version of. Then I found out that Pamela’s new graham crackers not only are gluten-free, but Paleo. Their graham crackers are grain-free and only sweetened by coconut sugar. I knew I had to finally make that magic happen! These Gluten-free Disneyland Peanut-butter Sandwich copycats are so easy to make.
Ingredients
- Dairy-free Mini Chips – I use Enjoy Life Foods, as it’s the easiest for me to find locally and melts great.
- Gluten-free Graham Crackers – I used Pamela’s brand, but use what’s accessible for you!
- Peanut butter – See note: you can also use another nut butter or sun butter, but just may have to add more powdered sugar to make it thick enough.
- Powdered Monk Fruit Sugar or Powdered Sugar – Monk fruit sugar is a paleo sweetener that some in the natural food world prefer over powdered sugar. It behaves similarly but can be hard to find. I find it on Amazon here.
- Vanilla – Ideally pure vanilla, but sometimes it’s too pricey for us. Imitation vanilla extract works here as well.
- Ghee – I usually make my own ghee, on page 266 of my cookbook, as it’s cheaper and IMO tastes better. But you can also find it at more and more grocery stores these days! You can also use a vegan butter like Miyokos instead. That makes these vegan as well!

Gluten-free Disneyland Chocolate Peanut Butter Sandwiches
Ingredients
- 2 cups dairy-free mini chips, divided or 12 ounces regular-sized chocolate chips
- 6 crackers Pamela's Grain-free Graham Crackers
- 3/4 cup creamy peanut butter see notes for nut-free option
- 3/4+ cup powdered monk fruit sweetener or powdered sugar use powdered monk fruit sweetener for Paleo option. May need more powdered sugar if using peanut butter with thinner consistency, see note in instructions.
- 1 teaspoon vanilla
- 1 1/2 tablespoons ghee
Instructions
- Line a tray or pan that will fit in your freezer with parchment. Spray parchment with cooking oil and set aside.
- In a small pan on the stove over low heat, melt 1 cup chocolate chips, stirring continuously so it doesn't burn. When all the chips have melted and chocolate is smooth and creamy (about 3 minutes), remove from heat.
- Dip each graham cracker in the melted chocolate and then set on the prepared pan. This will get a little messy but is worth it! See the notes for the bar method instead if you don't want to hand dip. Repeat dipping with all 6 crackers. Put in the freezer for 5 minutes until solid to the touch.
- While chocolate-covered grahams are freezing, in a medium mixing bowl combine the peanut butter, sugar, vanilla and ghee on low speed with a mixer until combined. Then whip at a high speed for 1 minute. NOTE: I wrote this recipe with thick, creamy peanut butter. If you are using thinner all-natural peanut butter, add additional powdered sugar 1 tablespoon at a time until peanut butter mixture has the texture of a thick frosting. Mixture should not be drippy or thin.
- Remove chocolate covered grahams from freezer and divide the peanut butter mixture evenly among the 6 grahams, a little over 2 tablespoons each. Place back in the freezer and freeze for 10 minutes.
- While graham crackers are freezing, melt the remaining 1 cup chocolate chips over low heat, stirring continuously, until smooth and creamy as before.
- After the 10 minutes, remove graham crackers from freezer and brush or spread the melted chocolate over the top and of the graham crackers. Make sure all of the peanut butter mixture is well covered by chocolate. I found this easiest with a pastry brush or the back of a spoon.
- Place graham crackers back in the freezer one more time, for 5 minutes or until the chocolate on top is solid to the touch.
- Completed sandwiches are stable at room temperature, though we prefer them right out of the fridge. Store in the fridge for up to 2 weeks or freezer for up to 3 months.
Notes
- NUT-FREE: Use sun butter and see the note in the instructions about adding additional sugar, as sun butter tends to be thin in texture.
- VEGAN: Use an equal amount Vegan butter like Miyoko's instead of the ghee.
- NO-DIP BAR METHOD: Want all the taste without hand dipping these sandwiches? Make these into bars! You will need:
9x9 pan
8 graham crackers
2 cups dairy-free mini chips
1 cup peanut butter
1 cup powdered sugar or monk fruit sugar
1 1/2 teaspoons vanilla
2 tablespoons ghee Line a 9x9 pan with parchment paper. Fill the bottom of the pan with a layer of graham crackers (for me that was 7.5 graham squares, with one row being cut in half). Melt the chocolate as described above. Spread melted chocolate on top of graham layer and freeze for 5 minutes. Make the peanut butter layer as described above and freeze. Melt the other 1 cup chocolate chips as described above and spread on top of the peanut butter layer, freezing again. Cut with a knife that has been run under hot water for easier cutting. Store as shared above. These will not be as stable at room temperature, as they are not sealed with chocolate like the individual sandwiches, but still delicious!
These were SO good be easy to make. Chocolate and PB is my favorite combo – and then the addition of a graham cracker really elevated it! I doubled the recipe thinking that for four people we would need more than 6 (or that they would go fast) but we always ended up splitting them because they were rich and filling (in the best way) – so that extended the deliciousness!!

This is SO good! Classic chocolate and peanut butter combo with the added crunch of a graham cracker. Can’t stop making these (and eating them obviously 😀…). Perfect after dinner treat. Used monkfruit for the first time and loved the swap!
