Yep, you read that right. No complicated ingredients or all-day cooking required. Just a healthy, no-bake, 30-minute meal packed with goodness the whole family will love.

You’ll find many of these pantry staples already hanging out in your kitchen:

For the Chicken

  • Boneless skinless chicken breast – Lean, juicy protein that cooks fast. Use the highest quality you can afford. 

  • Vegan butter or ghee – Adds richness and depth of flavor.
    • Vegan butter – I love the similar flavor and melt of vegan butter, and prefer it in my dairy-free dishes. Use a vegan butter like this one I love from Walmart (my favorite, but not Whole30). However, if you are on a Whole30 and using vegan butter, double-check the ingredients for compatibility! (Miyokos is a Whole30-compatible vegan butter, but does contain nuts)
    • Ghee – Ghee is Whole30 compatible (read more about that in the Whole30 program rules here!) and works well for our family. I use the recipe from my Cookbook to make my ghee and keep it budget-friendly!  But, if you have a true dairy allergy, ghee is derived from dairy and is not the right choice for you.
  • Arrowroot, potato, or cassava flour – For a quick coating on the chicken that keeps it tender and juicy. In this recipe, all of these work equally well! To learn more about the differences between paleo flours, when to use them, and my recommend brands, read my Paleo Flour Guide here

  • Trader Joe’s 21 Seasoning Salute – A salt-free spice blend that adds depth without overpowering. I ADORE Trader Joe’s 21 Seasoning Salute. It is my first choice for seasoning steamed veggies and excellent on this chicken. I don’t live near a Trader Joe’s (an hour away), so I go a few times a year and stock up! Or, it is available on Amazon or Walmart.com. If you don’t have access to the 21 Seasoning Salute, grab a poultry seasoning of choice like this Mrs. Dash.

  • Garlic salt & pepper – Simple, flavorful seasoning.

  • Minced fresh garlic – Because fresh garlic always levels things up. I prefer to get pre-minced garlic such as this one from Walmart to save time, especially in a “get it done” recipe like this one. But you can always mince your own garlic if you prefer and have time from whole garlic bulbs. 

For the Sauce

  • Honey – Brings that sticky-sweet balance to the smoky chipotle. Look for 100% honey with no other ingredients. See recipe notes for Whole30 variation, as honey is NOT Whole30.

  • Ketchup – Adds tang and thickness to the glaze. Use whatever ketchup works for your family. If you just need these to be gluten-free and/or dairy-free, a basic ketchup like Heinz Simple Organic works well. 

  • Coconut aminos – A soy-free umami hit, perfect for keeping this dish gluten-free and Paleo/Whole30 compatible. A great Paleo substitution for soy sauce. I use this brand from Walmart, though Trader Joe’s has one that’s even more affordable if you have a TJ’s near you. 

  • Chipotle peppers in adobo sauce – The key to that smoky, spicy flavor. ound in most grocery stores. Here is the one I bought from Walmart. Deepens the flavor of the sauce and adds the heat. See recipe notes to adjust the heat of this sauce to your family’s preference!

    • On a Whole30? Most canned chiptole peppers have sugar in them, making them not Whole30 compatible. Use ground chipotle chili peppers instead for the kick to this sauce.

  • Apple cider vinegar – Brightens the sauce and balances the sweetness.

  • Salt & garlic powder – Finishing touches for seasoning perfection.

How to Make It

Ready in under 30 minutes, this Honey Chipotle Chicken Rice Bowl comes together with ease:

  1. First, mix the starch, 21 Seasoning Salute, garlic salt, and pepper in a large bowl or zip top bag (my preference). Add the chicken pieces to the bag/bowl and stir or toss until well coated.
  2. Add 3 tablespoons vegan butter to a large saute pan over medium-high heat. Once hot, add the chicken in a single layer, shaking off any excess flour before adding to pan. Cook chicken until brown on both sides, about 5 minutes per side.
  3. While chicken is cooking, whisk together the honey, ketchup, coconut aminos, apple cider vinegar, chipotle peppers, water, salt, and garlic powder until smooth. Bring to a boil and then simmer covered for 5 minutes and then uncovered for 5 minutes, or until thickened, stirring regularly. For mild heat, remove 1 of the chipotle peppers and blend in the other. For medium heat, blend in both chipotle peppers into the sauce. For higher heat, add additional peppers at the beginning of the cooking. 
  4. Once the chicken is mostly browned, add the remaining 2 tablespoons vegan butter and 2 tablespoons minced garlic. Saute for another 3-4 minutes, or until the garlic is lightly browned and fragrant and the chicken is cooked through (no pink inside).
  5. Toss & Serve – Coat the crispy chicken bites in that smoky-sweet honey-chipotle sauce, then serve immediately on top of cooked rice or steamed cauliflower rice. Get ready for serious flavor!
  6. FREEZE leftover chicken in a sealed container for up to 3 months.

Notes

Nutrition information reflects a bowl built with chicken, sauce, cauliflower rice, and broccoli.
WHOLE30 MODIFICATION: The chicken is already Whole30 compatible. To make the sauce Whole30 compatible:
  • Use 1/2 c date paste instead of the 1/3 c honey. (Yes, I'm sure date paste is Whole30 compatible - I worked at Whole30 HQ for 5 years and it's also in my Whole30 endorsed cookbook). Can increase or decrease to desired sweetness.
  • Use an unsweetened ketchup like this one from Primal Kitchen
  • Increase the water to 1/4 cup, adding more at the end if needed for the desired consistency. 
  • Most canned chipotle peppers have sugar in them, making them not Whole30 compatible. Use ground chipotle chili peppers instead for the kick to this sauce. Use 1/4 teaspoon for a mild sauce, 1/2 teaspoon for a medium heat. 
  • Simmer covered the entire time, or it will get too thick. 
  • The result will have more of a BBQ sauce consistency instead of the sticky honey sauce pictured, but still sweet with a kick and delicious!

    We tried this last night and it was easy and so good! You can also skip frying the chicken, spray with oil, and air fry. Then toss in sauce. We did it both ways and next time I’ll probably just air fry (would need to run through the ghee/garlic also before sauce or skip that but the taste adds something!). Almost every recipe I’ve tried from this site (and cookbook) has been a huge win!
