You only need a handful of simple ingredients to make No-Bake Monster Protein Balls, and they’re all easy to work with:

Peanut butter – We use Skippy Natural peanut butter, which is nice and thick and doesn’t have to be stirred to combine. If you use a thinner natural peanut butter, you will need more oats to help the mixture hold its shape. This will vary per brand, add 2 tablespoons at a time until the mixture at the end is thick enough to hold its ball shape at room temperature. You can likely use sun butter or other nut butters, but note the additional oats required due to the thinner consistency.

Honey – Honey tastes lovely in these and is nice and thick to hold them together well. For a plant-based or vegan option, use an equal amount of maple syrup instead. If you use maple syrup, you may need to add more oats to help them hold their shape. Add 2 tablespoons at a time until the mixture at the end is thick enough to hold its ball shape at room temperature.

Quick oats – Make sure the ones you are using are gluten-free! These ones from Walmart are an accessible option and celiac certified.

I prefer Enjoy Life mini chips because they deliver more flavor throughout. Dairy-free M&M’s are fun but harder to find. I got these from Amazon, though I encourage you to look at your local natural food stores as well, as the Amazon options are pricey, IMO. If you don’t need dairy-free, of course grab regular chocolate chips and/or M&Ms.

How to Make It
This recipe couldn’t be more straightforward. Everything is combined in one bowl until evenly mixed. The mixture should be thick but scoopable, making it easy to roll into bite-sized balls. After that, they can be enjoyed right away or chilled briefly to firm up.
We store these in the fridge for up to 1 month, but they are also good on the counter for 2-3 weeks.
If you plan to travel or want them to hold up well for after-school sports or lunchboxes, you can also store them in the freezer. They will thaw by lunchtime and hold together beautifully.

No-Bake Monster Protein Balls
Ingredients
- 1/2 cup + 2 tablespoons smooth peanut butter melted, see notes
- 1/2 cup collagen powder or other protein powder of choice (not vegan, be sure to use a vegan protein powder if needed)
- 1/4 cup honey substitute maple syrup for vegan
- 3 tablespoons chia seeds optional, for extra fiber and protein
- 1 teaspoon vanilla
- 3/4 cup quick oats make sure they are gluten-free; use 3/4 cup if using chia seeds, 1 cup if not.
- 1/4-1/3 cup dairy-free chocolate chips or dairy-free m&m type candies, see notes
Instructions
- Melt the peanut butter. I do this in a microwave safe dish for 30 seconds. Or you can do it in a pot on the stove over medium low heat for about 1 minute, stirring regularly. Either way, don't overcook - burned peanut butter can't be saved!
- In a medium mixing bowl or in the pot from the stove, combine the melted peanut butter, collagen or protein powder, honey, chia seeds if using, and vanilla. Stir until well combined into a paste.
- Add the quick oats and stir. This will be THICK, which you want so the bites will hold together. Let this sit for 5 minutes for the moisture to absorb into the quick oats. Then, add the chocolate chips and/or m&ms.
- Scoop these out onto a tray lined with parchment paper. I use a 2-tablespoon cookie scoop for this, pressing the batter firmly into the scoop with my palm to compact the balls. Protein bites can be eaten immediately or stored.
