One-Pan Taco Rice
Recipe from Whole Food for Your Family, page 138
Ingredients
- 1 pound ground beef or other ground meat of choice
- 16 ounces frozen fajita veggies (mixed frozen peppers and onions)
- 1 12-ounce bag fresh or frozen riced cauliflower
- 1 8-ounce can tomato sauce
- 10 ounces Rotel tomatoes or can diced tomatoes with chilies
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon salt
- 1/2 bunch cilantro fresh, finely chopped (about 1 cup)
- 1 cup cilantro lime ranch see notes for link to homemade
Instructions
- In a large skillet over medium heat, cook the ground beef, peppers, and onions until the vegetables are tender, and the beef is mostly cooked, about 10 minutes.
- Stir in the cauilflower, tomato sauce, Rotel tomatoes, chili powder, cumin, and salt. Bring the mixture to a boil, then reduce to a simmer. Simmer for 10 minutes, or until most of the liquid has been absorbed.
- When ready to serve, sprinkle the cilantro over the top and drizzle with Cilantro Lime Ranch.
Notes
I love using my homemade Cilantro Lime Ranch to drizzle on this finished dish.Â
