Onion Rings
Recipe from Whole Food for Your Family, page 212
Ingredients
- 1 large yellow onion or white onion
- 1/2 cup tapioca flour
- 1/4 cup coconut flour
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- 3 large eggs
- 1/2 cup coconut oil or avocado oil
Instructions
- Trim off both ends of the onion and remove the outer peel. Holding it on its side, slice the onion vertically to create large rings. Set aside.
- In a small bowl, combine the flours, garlic powder, onion powder, and salt. In a separate small bowl, beat the eggs.
- In a medium saucepan, heat a shallow amount of oil over medium heat. One at a time, dip both sides of the onion rings in the egg, letting any excess drip off, and then press both sides into the flour mixture. Repeat the process, dipping the onion ring again into the egg and flour to double-batter the onion ring. Then carefully lay the batter rings into the oil.
- Cook the onion rings until they're golden, about 4 minutes on each side, taking care not to crowd the pan. Transfer the cooked onion rings to a paper towel-lined plate. Repeat with the remaining onion slices and serve hot with your dipping sauce of choice.
Notes
NOTE: The batter will stick best when eggs are in the mixture. But if needed, you can use 1/2 cup canned coconut milk instead. You can also sub 3/4 cup cassava flour or gluten-free 1:1 flour for the tapioca + coconut flour.Â
