Orange Chicken
Ingredients
For the Chicken
- 1/2 cup arrowroot or potato starch
- 1 teaspoon garlic salt
- 1 teaspoon black pepper
- 1 pound boneless skinless chicken breast
- 1/4 cup coconut oil or avocado oil
For the Sauce:
- 1/2 cup orange juice
- 1/4 cup coconut aminos
- 8 large dates pitted, to make into date paste
- 1 tablespoon arrowroot or potato starch
- 1 tablespoon fresh minced garlic
- 1/2 teaspoon red pepper flakes optional
- 1 12-ounce bag fresh or frozen riced cauliflower to serve on, or cooked rice, if not on Whole30
Instructions
- MAKE THE CHICKEN: In a medium bowl or large reusable bag, combine the flour, garlic salt, and pepper. Add the chicken and stir or shake until combined.
- In a large saucepan, heat the oil over medium heat. Add the marinated chicken and cook until it's crispy and light brown, 5-6 minutes on each side. Transfer the chicken to a bowl or plate and set aside. Leave the pan on the stove to make the sauce.
- MAKE DATE PASTE (for Whole30, if using): Combine dates and 1/2 c hot water in a blender or food processor and let sit for 1 minute. I usually press them down into the water a bit to ensure they are all soaking. Blend/process for 30 seconds, or until smooth. You will only use 1/4 cup in this recipe.Store any remaining date paste in a sealed container in the fridge for up to 2 weeks.
- MAKE THE SAUCE: In a small bowl, stir together the orange juice, coconut aminos, 1/4 c date paste, and flour. Set aside.
- Drain all but 1 tablespoon of the oil from the same pan in which you cooked the chicken. Add the garlic and cook over medium heat until light brown, 1-2 minutes. Stir in the orange juice mixture and cook for 30 seconds to 1 minute, until it has thickened. Add the red pepper flakes, if using. Fold in the chicken breasts and serve over steamed caulirice or rice.
- FREEZE in a sealed container for up to 3 months.
