Dry Ingredients
- Almond flour – Almond flour + tapioca flour are the perfect duo for a light but moist texture. See recipe notes for nut-free option. I prefer “super-fine” almond flour to get the best texture. I like this one from Blue Diamond I can get at Sam’s Club or Amazon.
- Tapioca Flour: Adds a bit of elasticity and helps bind the muffins together, giving them that perfect muffin texture without any gluten. Though you can use arrowroot or potato starch instead, tapioca is ideal for it’s ability to give a stretch to baked Paleo good that can be dry. - Unflavored Collagen Peptides: The secret ingredient that boosts the protein content, making these muffins not just tasty but also a great source of protein. Yes, you can use another unflavored or vanilla protein powder of your choice in these as well. There are a lot of collagen brands out there. Use what is most accessible to you. I often get Vital Proteins unflavored collagen when it is on sale at Costco. I love and use regularly BUBS Collagen, which is Whole30 Approved.

- Dairy-free Greek yogurt – Helps keep these muffins super moist while adding extra protein. I usually get Silk Dairy-free Greek Yogurt. You can use regular dairy-free yogurt instead, if you can’t find the Greek yogurt, greek yogurt just has more protein in it.
- Maple syrup – Naturally sweetened with just the right amount of flavor.
- Light-tasting olive oil – A neutral oil that adds moisture without overpowering the muffins.

Eggs – for structure and moisture. We use 3 eggs in this recipe to help get the tall muffin domes on top!

How to Make It
These muffins are seriously easy to whip up. Here’s how:
- Preheat and Prep First, preheat your oven to 375°F and line a muffin tin with paper liners or grease it lightly with oil.
- Mix the Dry Ingredients Then, in a large mixing bowl, whisk together the almond flour, tapioca flour, collagen or protein powder, baking powder, and salt. This ensures the ingredients are evenly distributed.
- Bring It All Together Next, add the wet ingredients into the bowl with the dry ingredients. Stir gently until combined.
- Bake Divide the batter evenly among the prepared muffin cups, filling each very full, pretty much to the top of the muffin cupl. Bake at 375 degrees for 10 minutes. Then, without opening the oven, reduce the oven heat to 350 degrees. Cook for an additional 10-12 minutes, or until top is solid to the touch and some are starting to lightly brown.
- Cool and Enjoy Finally, the muffins cool in the pan for 5 minutes before transferring them to a wire rack to cool completely. Then, dive in and enjoy!
- To store: These store best on the counter just covered with a towel for up to 4 days. If you want to seal them in a container on the counter, do so in a sealed container or ziptop bag with a paper towel on top and underneath them to help absorb any excess moisture. This will help minimize the tops from becoming spongy. Or, freeze in a sealed container for up to 3 months.

Paleo Protein Lemon Poppyseed Muffins

Ingredients
- 3 cups almond flour (see notes for nut-free)
- 1/2 cup tapioca flour
- 1/2 cup unflavored collagen powder or other unflavored or vanilla protein powder of choice
- 2 tablespoons poppyseeds
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 cup dairy-free Greek yogurt
- 1/2 cup maple syrup
- 1/4 cup light tasting olive oil
- 3 large eggs
- 2 tablespoons lemon zest about 2 large lemons worth
- 1.5 teaspoons lemon extract
Optional Glaze
- 3 tablespoons heavy vegan cream or canned unsweetened full-fat coconut milk (can use other non-dairy milk, it will just be thinner)
- 1 cup powdered sugar or powdered monk fruit sugar
- 1/2 teaspoon lemon extract
- 1 teaspoon lemon zest
Instructions
- Preheat oven to 375°F and line a muffin tin with paper liners or grease it lightly with oil.
- In a large mixing bowl, whisk together the almond flour, tapioca flour, collagen or protein powder, baking powder, and salt.
- Add the wet ingredients (yogurt-lemon extract) into the bowl with the dry ingredients. Stir gently until combined.
- Divide the batter evenly among the prepared muffin cups, filling each very full, pretty much to the top of the muffin cupl. Bake at 375 degrees for 10 minutes. Then, without opening the oven, reduce the oven heat to 350 degrees. Cook for an additional 10-12 minutes, or until top is solid to the touch and some are starting to lightly brown.
- Let the muffins cool in the pan for 5 minutes before transferring them to a wire rack to cool completely. Top with option glaze, if using.
- TO STORE: Store on the counter in a sealed container or ziptop bag with a paper towel underneath them to help absorb any excess moisture. Or, freeze in a sealed container for up to 3 months.
Notes
- 1.5 cups 1:1 gluten-free flour instead of the almond + tapioca flour. Yes, only 1.5 cups 1:1 gluten-free flour total (don't use the tapioca flour). I tested it with and highly recommend King Arthur 1:1 Gluten-free Flour for best results.
- Increase the yogurt to 1 1/3 cup yogurt
- Add 1/4 cup coconut sugar or other granulated sugar of choice.
- Add 1/4 cup oat milk or other milk of choice.
- NOTE: These changes will have a large impact on the nutritional content of your muffins.

Could lactose-free Greek yogurt work instead of the dairy free? If so, any changes in ingredients or cooking times? I had bought it before needing to be dairy free & hate the thought of throwing it away.
Yes, I believe any yogurt that works for your dietary needs would work in this recipe (though I haven’t specifically tested it). I just recommend it’s plain, vanilla, or lemon flavored. Hope you love this recipe!
