Taco Chicken Strips
Recipe from Whole Food for Your Family, page 87
Ingredients
- 1 pound boneless skinless chicken breast
- 1/4 cup arrowroot or potato starch can also use tapioca flour or a gluten-free 1:1 flour
- 1 large eggs see notes for egg-free
- 1 packet taco seasoning or 2 tablespoons; see notes
- 2 cups plantain chips crushed into fine crumbs, then measured; see notes
- 1/2 cup Cilantro Lime Ranch or Ranch; optional for dipping
Instructions
- OVEN: Preheat the oven to 350 degrees, if using. Set a cooling rack on a baking sheet, spray the rack with cooking spray, and set inside. This helps the chicken cook on all sides. If you don't have a cooling rack, line a cookie sheet with parchment paper.
- Set out three small bowls. In one, pour the flour. In the second, beat the egg. In the third, combine the taco seasoning and crushed plantain chips. Pat the chicken pieces dry using paper towels to help the breading stick.
- To bread the chicken pieces, coat both sides in the flour, shaking off any excess. Then lay the chicken in the egg, flip to coat both sides, and allow the excess to drip off. Finally, coat the chicken with the plantain-taco mixture, pressing the chicken pieces firmly into the mixture. Lay the breaded chicken pieces on the prepared pan or in the air fryer and repeat with the remaining chicken Spray each breaded chicken piece generously with cooking oil spray.
- OVEN: Cook for 12-15 minutes, flipping halfway through and spraying again with cooking oil, until the chicken is golden on the outside with no pink inside. AIR FRYER: Cook at 350 for 8-9 minutes, flipping halfway through, until the chicken is no longer pink inside. Cook time will vary depending on the size of your nuggets or strips (and air fryer, if using).
- FREEZE: In a single layer on a cooling rack or baking sheet lined with parchment. Once frozen, store in a sealed container for up to 3 months.
Notes
Nutritional information is for the chicken only, not the dipping sauce of choice.Â
I love using my homemade Cilantro Lime Ranch.
You can buy a Paleo/Whole30 compatible taco seasoning with Siete Taco Seasoning (linked in ingredients). Or, I make my own for less with this easy recipe.Â
