Ingredients

  • Gluten-free chickpea pasta – We love and prefer Banza pasta. You make this pasta salad unique by boiling then air frying or baking the pasta until it’s crunchy like a chip. This really levels up the salad without a lot of work!
  • Olive or avocado oil
  • Garlic powder
  • Dairy-free parmesan cheese – You may not know this exists, but it does and adds such a delightful flavor! We use this brand
  • Cooking oil spray
  • Rotisserie chicken
  • Cucumber
  • Roma tomatoes
  • Green or red bell pepper
  • Yellow onion
  • Fresh basil leaves
  • Tessemae’s Organic Lemon Garlic Dressing – This dressing is Whole30 Approved with simple, whole-food ingredients. But, if you can’t find it in your area or it’s not in your budget, see recipe notes for a homemade version!
  • Avocados, optional for additional healthy fats and satiety. Be sure to not add these until just before serving. 
  • Bacon, optional for a delicious topping!
  • Garlic salt, to taste

 

How to Make It

  • Cook pasta according to package instructions. Drain the pasta and pour pasta into a large bowl.
  • Preheat oven to 400 degrees, if using the oven (I prefer to air fry). 
  • Toss pasta with olive oil, garlic powder, and 2 tablespoons vegan parmesan. 
  • Spread pasta in a single layer on a baking sheet lined with parchment or an air fryer tray. Spray generously with cooking oil spray.
  • AIR FRY pasta at 400 degrees for 25-30 minutes or BAKE for 35-40 minutes. Watch closely and stir every 10 minutes and spray again with cooking oil spray. Cook times will vary based on the brand of pasta and the type of air fryer, so keep an eye on these. They are done when lightly browned and crispy.
  • Chop veggies and chicken while the pasta is cooking. I prefer to make this quicker with my veggie chopper or a few pulses in my large food processor. Saves so much time!
  • Combine in a large bowl the crispy pasta, chopped chicken, diced cucumber, tomato, bell pepper, onion, basil, dressing, the remaining 2 tablespoons of parmesan, if using. Garnish with bacon bits, if using, and season with garlic salt to taste. 
  • Store covered in the fridge for up to 5 days. Add chopped avocado, if using, just before serving.

Notes

NOTE: Pasta will soften in the fridge. If you want to keep that "crispy pasta" effect, keep the pasta separate from the rest of the salad and add just before eating. 
TIME SAVER: You can also just cook the pasta per box instructions and add to the pasta salad without doing the "crispy" part. 
Quick Lemony Italian-ish dressing
  • 1/4 cup olive oil
  • 2 tbsp lemon juice 
  • 1 tbsp red wine vinegar
  • 1 tsp Dijon mustard
  • 1–2 cloves/teaspoons minced garlic
  • 1 tsp Italian seasoning
  • Salt + pepper
  • Optional: tiny drizzle of honey (balances acidity)
Shake to combine. Ingredients will separate in the fridge, shake to re-combine before serving.

  2. What is the brand of Parmesan cheese? The link takes me to Walmart and says it can’t find what I’m looking for

    • I use Follow Your Heart Parmesan cheese and really enjoy it. If the link doesn’t work, then that just means your Walmart unfortunately doesn’t sell it. I hope a natural food store near you does!
