Consider this Whole30 Cilantro Salsa Slaw to be the easiest way to get more veggies on your plate this week. This Whole30 Cilantro Salsa Slaw is not only gluten-free, dairy-free, and veggie loaded, it takes only 10 minutes to put together. Mexican food is possibly our family’s favorite cuisine. I wanted to find a way to get more veggies on the table that could pair with our Mexican favorites. This slaw comes together quickly and is a fast add-on.

So…it’s Whole30 Cilantro Salsa Slaw is coleslaw with a Mexican-inspired twist?

I don’t like traditional coleslaw. It just isn’t my thing, even though I grew up in the south. But, this Cilantro Salsa Slaw is loaded with our favorite favorites and was thrilled when even my picky eater took some. Also, kid-approved and no cooking required! It starts with a basic coleslaw mix but adds pico de gallo salsa, my Cilantro Lime Ranch, avocado, jalapeño, and garlic salt. Easy peasy!

Don’t want to make your own dressing? You can buy a Whole30 Cilantro Lime Ranch dressing from Tessemae’s.

Also, keep in mind that coleslaw doesn’t keep well in the fridge. If you don’t want to eat it all in one setting, only add dressing to the portion you want to eat now. The coleslaw will keep in the refrigerator for up to 5 days without the dressing. Add dressing just before serving.

Substitutions

  • Instead of 1 cup pico de gallo, you can use 1 large tomato finely chopped + 1 small jalapeño + 3 tablespoons finely chopped onion.

Ingredients
  

  • 1 14oz bag classic coleslaw (shredded green cabbage and carrots)
  • 1 cup pico de gallo
  • 1/2 cup Cilantro Lime Ranch
  • 1 large fresh avocado
  • 1/2 cup finely chopped fresh cilantro
  • 1/2 small jalapeno, seeded and finely chopped (omit if using the substitution that includes jalapeno)
  • 1/2 teaspoon garlic salt
  • If not on a Whole30: optional to include 1/2 cup corn or 1/2 cup rinsed canned black beans

Instructions
 

  • In a medium bowl, combine all of the ingredients, stirring until well combined. Eat immediately.

    Not only very easy to make but very tasty! During my last whole 30 I made it three times and took it to events. Everyone raved. This receive & cookbook are highly recommended!
