Whole30 Pesto Caulirice

Three words: pesto cauliflower rice. I love all the micronutrients in cauliflower rice that I’ve never gone back to rice, even though it’s not really inflammatory for me. But this pesto caulirice is my *favorite* way to have it. Cause #pesto, plus it’s #whole30compliant and #paleo

This is not really a recipe as much as a easy combination for deliciousness. But we embrace the simple around here!


Whole30 Pesto Caulirice

  • 1 16 oz bag cauliflower rice about 3 1/3 cups
  • 2 tablespoons coconut oil
  • 1/3-1/2 cup pesto link in to my Whole30 pesto recipe in notes!
  • 1/2 teaspoon garlic salt
  • 1/3 cup chopped cashews optional


  • Add coconut oil to a medium saucepan and place on stove over medium high heat. Add riced cauliflower.
  • Cook, stirring occasionally, until riced cauliflower is translucent.
  • If you haven’t already, while caulirice is cooking, prep the pesto. If you are using store bought pesto (Trader Joes has a Whole30 compliant one), you can skip this step.
  • Remove pan of cooked cauliflower from heat and stir in 1/3-1/2 cup (depends on how you like it!) of the prepped pesto. Sprinkle with garlic salt, and chopped cashews (if desired - optional but delicious and I love the crunch it adds!). Delicious paired with grilled steak or my garlic chicken!
