Add oil to a large saucepan on stove over medium high heat. Add all the veggies and chicken and saute until onion is translucent and chicken is white on all sides.
Sprinkle veggie/chicken mixture with spices.
Combine bbq sauce and water. Pour combined sauce over veggies/chicken. Add potatoes and stir to combine all.
Bring to a boil then reduce heat and simmer about 15 minutes, until chicken is cooked through and veggies are tender. Top with chopped cilantro and serve.
