Whole30 BBQ Chicken Hash


  • 1 1/2 tablespoons olive oil
  • 1 medium onion chopped
  • 1/2 cup chopped celery
  • 1/2 cup chopped carrots
  • 1 green bell pepper chopped
  • 2-3 chicken breasts cut into small chunks
  • 3/4 cup compliant barbecue sauce* I use New Primal or homemade
  • 1/2 cup water
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1 teaspoon salt
  • 3 1/2 cups frozen cubed hashbrowns or boiled potatoes
  • Chopped cilantro optional but delicious


  1. Add oil to a large saucepan on stove over medium high heat. Add all the veggies and chicken and saute until onion is translucent and chicken is white on all sides. 

  2. Sprinkle veggie/chicken mixture with spices. 

  3. Combine bbq sauce and water. Pour combined sauce over veggies/chicken. Add potatoes and stir to combine all. 

  4. Bring to a boil then reduce heat and simmer about 15 minutes, until chicken is cooked through and veggies are tender. Top with chopped cilantro and serve.
