Chocolate Paleo Pudding & Fruit Dip

Ingredients

  • 2 cups steamed riced cauliflower*
  • 1/4 cup cocoa
  • 1/4 cup nut or sun butter
  • 1/4 cup honey*
  • 1 teaspoon vanilla
  • 1 15 oz can coconut cream** use only the cream, no liquid

Instructions

  1. In a blender, combine all ingredients until smooth and creamy.

  2. Eat immediately or chill to thicken. Store in the fridge and enjoy as a pudding or rock it as a fruit dip.

Recipe Notes

*FOR KETO - Use 2-3 tablespoons Lakanto Sugar-Free Maple Syrup or granulated Monk Fruit sweetener to sweeten instead, to taste.

*I love using steam in a bag riced cauliflower to make this come together quickly. 

**Coconut cream is optional, but will make it deliciously creamy like a mousse and highly recommended. Plus, the healthy fats are awesome for satiety and decreased cravings.
