This Cowboy Caviar comes together with simple pantry and fridge staples:

Canned sweet corn – An easy pantry staple that helps you get super sweet and flavorful corn. Look for one like this one that says “sweet corn” on it.

Pico de gallo – Using pico de gallo gets fresh tomatoes in your Cowboy Caviar without having to do any chopping! If you prefer, you can use 1 1/2 cups fresh finely chopped roma tomatoes instead.

Red and green bell peppers – Finely chopped bell peppers add a lot of flavor and color. I use this $25 vegetable chopper to make cutting these super fast and even. Worth every penny to have a veggie chopper!

- Drain and rinse your black beans and black-eyed peas.
- In a large mixing bowl, combine the corn, pico de gallo, chopped peppers, onion, and cilantro.
- Stir in the rinsed beans and peas until everything is evenly mixed.
- Pour on the Italian dressing and mix until evenly coated.
- Add your avocado last, gently folding it in to avoid smashing, just before serving.
- Serve immediately with tortilla chips, or chill for later to let the flavors really shine.

Cowboy Caviar
Ingredients
- 1 15-ounce can black beans
- 1 15-ounce can black-eyed peas
- 1 15-ounce can sweet corn
- 1 1/2 cup pico de gallo
- 1/2 medium red bell pepper seeded and finely chopped
- 1/2 medium green bell pepper seeded and finely chopped
- 1/2 medium red onion finely chopped
- 1/4 bunch cilantro chopped, then measured to about 1/2 cup
- 2 medium avocados optional, see notes if making ahead
Small Batch Italian Dressing (or use 1/3 c store bought)
- 1/4 cup olive oil or avocado oil
- 2 tablespoon red wine vinegar
- 1 teaspoon honey omit for vegan
- 1 teaspoon lemon juice
- 1/4 teaspoon garlic powder
- 1/4 teaspoon dried oregano
- 1/4 teaspoon dried thyme
- 1/4 teaspoon salt
- 1/8 teaspoon onion powder
- 1/8 teaspoon black pepper
- pinch red pepper flakes optional
Instructions
- Drain and rinse your black beans and black-eyed peas. Drain the sweet corn.
- In a large mixing bowl, combine the corn, pico de gallo, chopped peppers, onion, cilantro, rinsed beans and peas, and drained corn.
- Whisk together and pour on the Italian dressing and mix until evenly coated.
- Add your avocado last, gently folding it in to avoid smashing, just before serving. If not serving right away, don't add avocado until you are.

- Store in a sealed container in the fridge for up to 4 days.
